Aunt Wavel’s Pumpkin Bread

Batter Ingredients:
- 1 ½ c. Flour
- ½ tsp. Salt
- ½ tsp. Ground Cinnamon
- ½ tsp. Soda
- ¼ tsp. Ground Cloves
- ¼ tsp. Ground Nutmeg
- ½ c. Vegetable Oil
- 1 ½ c. Sugar
- 2 Eggs
- 1 c. Libby’s Pumpkin Filling
Cinnamon Sugar Sprinkle:
- 3 Tbsp. Sugar
- ½ tsp. Ground Cinnamon
Method:
- Pre-heat oven to 350°
- Butter and flour or spray with baking pan release (2) 8½ x 4 ½ x 2 ½ inch loaf pans.
- Place all ingredients into a mixer and blend all batter ingredients together on medium speed making sure to mix thoroughly.
- Divide batter evenly between the two prepared pans.
- Sprinkle top with sugar and cinnamon sprinkle.
- Bake at 350°F for about 35 to 40 minutes or until toothpick comes out clean.
NOTE: This recipe can be baked in muffin tins or Bundt cake pans as well.
Yields 2 loaves.
